Baking exhibition | Debunking bread myths through sandwich innovation
National Sandwich Day, an American holiday, has caught global interest. According to people in the Baking industry, despite fluctuations in bread consumption, Americans’ love for sandwiches remains strong.
To observe this day, Lallemand Baking partnered with the Grain Foods Foundation (GFF) to clear up bread misconceptions in a webinar. Julie Miller Jones from GFF and Charlotte Martin, a dietitian, addressed the "sandwich dilemma" myths among over 140 Lallemand staff.
Challenging a Wall Street Journal article that blamed sandwiches for unhealthy diets, Martin emphasized the variety of sandwiches available, from deli classics to health-conscious options, and the importance of making wise choices.
Miller Jones noted that despite less bread consumption, obesity has risen, suggesting oversized portions are to blame, not bread itself. She highlighted the benefits of whole grains, providing essential nutrients like iron, fiber, and calcium.
Martin explained the glycemic index of bread varies and individual responses differ. She also emphasized the importance of considering the whole sandwich’s ingredients, not just the bread, in managing blood sugar.
On sodium, Martin pointed out not all bread is high in sodium, with many low-sodium options available. She advised looking at the overall sodium content of a sandwich since fillings can contribute significantly.
Martin shared that sandwiches can be nutritious, suggesting using various grains, adding vegetables, and choosing quality proteins and low-fat spreads to create healthier options within a balanced diet.
