Baking Exhibition | Bakery Shopping Trends in China: Offline Specialty Stores Dominate

The baking exhibition notes that the bakery industry in China has seen rapid growth in recent years, with a continuously expanding market size. As consumers increasingly pursue health and quality, high-end and personalized bakery products are gaining more popularity. In terms of consumer behavior, there is a growing demand for quality and taste in bakery products, with a preference for healthy, low-sugar, and additive-free options.

With the development of the digital economy, e-commerce has broadened the channels through which consumers purchase bakery products, and new e-commerce methods such as community operation and community group buying are becoming increasingly popular among consumers.

According to data from iiMedia Research, in the main consumption channels for bakery products in China for 2024, 49.2% of consumers opt for specialty bakery stores, 37.7% choose offline supermarkets, 37.6% prefer traditional e-commerce platforms, 24.2% select online communities, and 23.7% participate in community group buying. Offline bakery specialty stores remain the top choice for consumers due to their convenience and the ability to make immediate purchases.

With the rise of community group buying, mini-program group buying has emerged as a new purchasing channel. This model leverages the community's social network through group buying organizers to provide consumers with high-quality and affordable handmade bakery products. Group buying organizers often procure in bulk at lower prices and then sell to community members at discounted rates. The community group buying model not only increases consumer purchasing options but also brings new sales channels and customer groups to bakeries. Furthermore, the convenience of community group buying and the credibility of group buying organizers make consumers more willing to try and purchase, thereby driving the growth in bakery product sales.
