Baking Expo | The Cookie Industry: Diversified Development in Response to Consumer Demands

Cookies are made from primary ingredients such as wheat flour, sugar, syrup, fats, and dairy products, with the addition of leavening agents and other auxiliary materials. They are processed through a cold powder mixing technique and shaped using methods like extrusion, wire cutting, or roller imprinting before being baked into biscuits with a high fat content, featuring three-dimensional patterns or regular ripples on the surface.

Data from iiMedia Research shows that in 2024, among Chinese consumers' perceptions of the shortcomings of cookie products, 39.10% of consumers would choose "high prices," 35.93% would choose "fragility," 34.10% would choose "single flavor," 31.06% would choose "unhealthy," and 30.21% would choose "single product."

Currently, cookie products are facing the issue of high consumer prices, which causes some consumers to hesitate. At the same time, the fragility of cookies and the monotony of their flavors also affect their sales and consumers' eating experiences, making it difficult to meet the growing diverse needs of consumers. More importantly, the high sugar and fat content in cookie products have also raised concerns among consumers about their health.
